return of the rugelach

With regard to special mention of Eileen Mintz’s “Best Rugelach” recipe (“Your choice: The Best of Everything,” Feb 6), I want to assure all that many of use have that recipe because of the Jewish Transcript.
I am referring to the January 26, 2001 “Northwest Kosher Kitchen” article written by Eileen Mintz, in which she shares special personal commentary and of course recipes, including Chocolate Rugelach!
I have a yellowed copy of the article which includes a delightful picture of Eileen in her home kitchen. It would be wonderful for JTNews to run it again.
The recipe is also available through Salty’s Seafood Restaurant recipes, under desserts, of course. The two recipes have a slight variation on the chocolate, sauce vs. chocolate chips.
We will greatly miss Eileen’s luminous presence in this world but are so fortunate to have known her, and her well-tested recipes fortunately live on.
